Sweet Potato Cheesecake with Caramel Sauce
This is one of the most delicious cheesecakes I have tried.It has surprisingly pleasant creamy texture and great taste.Sweet potatoes are organically fit here,you would not even guess that this cheesecake has some vegetable and with caramel it turns yummy.
  • 270 g of biscuits
  • ½ tsp cinnamon
  • ¼ tsp clove
  • ¼ tsp nutmeg
  • 60 g melted butter
  • 700 g cream cheese
  • 150 g of sugar
  • 15 g flour
  • 425 g mashed sweet potatoes
  • 1 tablespoon cinnamon
  • 1 tsp vanilla extract
  • 2 large eggs
  • 55 g butter
  • A pinch of salt
  • 2 tablespoons of cream or milk
  • 110 g of brown sugar
  • 50g chopped pecans (or walnuts )
  1. Preheat oven to 160 degrees.Crumble the biscuits and mix with melted butter and spices.Spread on the bottom of the form in an even layer, compact.Put into the fridge while cooking the filling.
  2. Mix cream cheese and sugar, beat until smooth.Add mashed sweet potato,flour and cinnamon and stir.Add vanilla extract and eggs, beat until smooth. Pour onto a cooled substrate. Bake for 40-45 minutes. The cheesecake should be no more liquid,but still slightly shaken. Cool in the form,and then put into the fridge overnight.
  3. For the caramel,melt the butter,add brown sugar,heat to dissolve the sugar.Add milk or cream,stir until smooth.Add chopped nuts and a pinch of salt,pour over cheesecake.Cool until caramel solidification,cut into portions.
