Meatless Soup with White Fungus( a la Carpathians)
Just so we called in Transcarpathia lean broth of white mushrooms.This is one of the most fragrant soups in the world(in my opinion),and still is one of the most delicious meatless dishes in the world.
  • White dried mushrooms 300g
  • 1 onion
  • Bay leaves 2 pieces
  • 2 carrots
  • Parsley root 1 pc
  • Kohlrabi 0.5 pc
  • 2 cloves of garlic
  • Salt, black pepper, sugar
  • Pasta to soup
  • Parsley for serving
  1. Soak mushrooms for several hours in cold water.(I pour as much water as I need for the soup).Put on the fire and bring to a boiling.Add parsley root,kohlrabi and bay leaf.Cook for 20 minutes.Fry onion and garlic finely chopped and small cubes of carrot on oil until golden brown, add the sugar and pepper.
  2. Then add the vegetable mixture into the broth and cook for another 20-25 minutes.Season with salt and serve with chopped parsley.
