
Empanadas with Pumpkin Cheese Filling
They are very tasty
Ingredients
- 1 red onion
- 130 g feta cheese
- ½-2/3 cup of pumpkin puree
- salt and pepper
- 1 tbsp of olive oil
- 1 clove of garlic
- ½ teaspoon of dry thyme
- ½ teaspoon of dry thyme
- + whipped yolk with 1-2 tbsp of milk and sesame
Instructions
- Fry onions and garlic on olive oil until softened,add thyme,pumpkin puree and mix.Simmer a few minutes,add the crumbled feta and salt and pepper to taste.
- Roll the dough thinly,cut out circles with a cup.In each circle put a little filling,fold in half and form a patty,pressing edges with a fork. Spread pies on a baking sheet,prick each with a toothpick,grease patties with yolk-milk mixture and sprinkle with sesame seeds.
- Bake empanadas at 180-190 C for 30 minutes(until golden)
- Serve warm or cold.
