Empanadas with Pumpkin Cheese Filling
They are very tasty
  • 1 red onion
  • 130 g feta cheese
  • ½-2/3 cup of pumpkin puree
  • salt and pepper
  • 1 tbsp of olive oil
  • 1 clove of garlic
  • ½ teaspoon of dry thyme
  • ½ teaspoon of dry thyme
  • + whipped yolk with 1-2 tbsp of milk and sesame
  1. Fry onions and garlic on olive oil until softened,add thyme,pumpkin puree and mix.Simmer a few minutes,add the crumbled feta and salt and pepper to taste.
  2. Roll the dough thinly,cut out circles with a cup.In each circle put a little filling,fold in half and form a patty,pressing edges with a fork. Spread pies on a baking sheet,prick each with a toothpick,grease patties with yolk-milk mixture and sprinkle with sesame seeds.
  3. Bake empanadas at 180-190 C for 30 minutes(until golden)
  4. Serve warm or cold.
